Denise Appel - Owner and Head Chef

Denise Appel, originally from Glastonbury, Connecticut, has been wildly successful in her passion and vision as a chef. As Owner and Executive Chef of ZINC New Haven and Kitchen ZINC, Denise credits her Grandmother, Katherine, for instilling her true love for cooking. Chef Denise’s cuisine features regionally farmed produce and cheeses, sustainably raised meats and fresh, non-endangered, line-caught fish. At her restaurants, Denise, updates her menus on a regular basis; sourcing only the freshest ingredients. When Denise isn’t creating culinary masterpieces and broadening her cooking repertoire, you can find her spending time with her three rescued pups, traveling the world, or painting.

Javon Phelmetta & Mike Zullo - Pizza Guys


Javon Phelmetta is a proud native of New Haven. As a young boy he was inspired by his mother and grandmother as he watched them cook family meals and enjoyed their loving creations. At the age of 12 he started learning their recipes and knew he wanted to become a chef. He enrolled in the Lincoln Culinary Institute program and began an internship with Chef-Owner Denise Appel, who quickly saw his potential and skill. He became a solid member of the Kitchen ZINC team upon graduating from Lincoln Culinary Institute and continues to enhance his skills every day.

Mike Zullo is a first generation Italian-American. He began cooking in Italian restaurants at the age of 16 and later began making pizza using, every type of pizza oven, different types of doughs and all kinds of ingredients. Over the year, he discovered a true passion for making pizza. When he joined the KZ Team he further developed a deep satisfaction in creating the perfect pie by using Chef Denise’s treasured dough recipe and the freshest possible ingredients available. His creativity, talent, and intense connection to his work is what helps make Kitchen ZINC pizza delicious.
